Minted Lamb with Crushed New Potato Salad
Ready in 20 minutes
2 essential Waitrose Lamb Steaks
1 tbsp oil
1 tbsp essential Waitrose White Wine Vinegar
½ x 25g pack mint, chopped
350g essential Waitrose New Potatoes, halved if large
4 essential Waitrose Salad Onions, sliced
2 tbsp essential Waitrose Half Fat Mayonnaise
1. Place the lamb steaks in a bowl and add the oil, vinegar and half the mint, season and chill for 10-15 minutes.
2. Meanwhile, cook the potatoes in boiling water for 10-15 minutes until tender, drain and cool slightly.
3. Griddle the steaks for 2-3 minutes each side or according to taste.
4. Coarsely crush the potatoes and stir in the mayonnaise salad onions and remaining mint, season. Serve topped with the lamb steaks and serve with leaf salad.
