Courgettes with Crunchy Cheese Topping
Ready in 25 minutes
2 essential Waitrose Courgettes, halved lengthways
150g essential Waitrose Cherry Tomatoes, halved
75g essential Waitrose Mascarpone
1 clove garlic, crushed
75g essential Waitrose Double Gloucester Cheese, grated
50g essential Waitrose White Sliced Bread, make into breadcrumbs
1. Preheat the oven to 200oC, gas mark 6.
2. Cook the courgettes in boiling water for 5 minutes, drain.
3. Mix the tomatoes, mascarpone and garlic together and place in an ovenproof serving dish. Place the courgettes on top, season.
4. Mix the double Gloucester and breadcrumbs together and sprinkle over the courgettes and bake for 15 minutes.
